More meat, less potatoes -- Korean BBQs and beef jerky as a go to snack!

When we first got our dehydrator, I stared at it blankly for months, maybe a year.  I don't remember, but as simple as it takes to operate it, it just looked daunting.  I'd never used one, never seen anyone else use one, had no idea what their success rates were … and of course, when it comes to cooking, I'm neurotic.  If it's not perfect, if I don't like it, I assume no one else does either, even if the recipe was at fault.  I've been cooking for decades, and I believe I should be able to discern whether it is going to need tweaked ahead of time.  (Gawd, the moussaka last night … **eyeroll** whatever).

We started out with the typical apple chips …. Blondees, Cameos, all from a local orchard here.  Blondees are only available a few weeks out of the season once the orchard opens, and they are soooo good.  When I tried bell pepper slices, kale, they all turned out itty bitty, more like crumbs.  However, the apple chips were amazing.

It wasn't until his coworker J~, who pretty much has his own game dehydrating and smoking operation, got us interested (and me brave enough) to try his recipe.  Once we did that, and it was a success, we found a Korean bulgogi marinade that worked as a jerky recipe.  Nom nom nom!!!

So, now he has a nutritious, no/micro carbs, no/lowfat snack that we can create at home, create our own flavors (apple/cherry juice steak marinade and blueberry cayenne steak marinades didn't work, they were mediocre -- I found them online and was looking for a sweet flavor).  I've found a website by a self-professed hardcore carnivore who has won paleo recipe contests  She has 36 beef jerky recipes for us to try from her website morningchores.com.  I immediately went out and got round steak last night to try … am currently dehydrating a pound of the first two recipes, "bloody mary" and "coffee".  Gawd, my house … the smells … one of the many benefits of dehydrating jerky for 10+ hours, as I'm wicked into aromatherapy.

On the other set of claws … if you can find a Korean BBQ, where you cook everything yourself, they are primarily meat and vegetables, and it differs depending where you go.  We know of two between here and Indianapolis (we had our first experience at Banda in Indianapolis, and loved it!!!).  The one here is at a fusion restaurant, and they are primarily meat-centric.  Of course you get appetizers, soup, salad, a couple of veggies you also have to cook, but there are plates and plates and plates of shrimp, chicken, pork, and beef.  Seriously, this is the way to go.  High protein, low carb/low fat, no fuss, no muss.

Bottom line, we're starting to see what Adkins was getting at … avoid the carbs, go all meat, veggies, and lowfat dairy, and boom … you're on the path to better health.  Do be advised tho', you HAVE to have carbs in order to function … just don't do as I do … do as I say (Hi, my name is "RKW", I'm a carb addict).  You have great options here, use 'em to make great choices.
