Late Night Simple Meal - Spiced Couscous and Chicken

He generally doesn't like to eat late in the evening, doesn't help with
digestion and calorie burning since the body slows down and all, and
I understand that … but if we take an after work nap or we have stuff
to do and we need to eat late … I'd rather us eat healthy late than grabbing
something at a restaurant so we can eat quicker, earlier, less healthy.  We've
proven it gets us in trouble.

Spiced Couscous and Chicken from the FNM Best and Lightest

3/4 tsp ground cinnamon
1 tsp ground ginger
salt and pepper
4 medium carrots, thinly sliced (use the bag of shredded)
1 cup couscous, preferably whole wheat
2 cups shredded rotisserie chicken (used the precooked fajita chicken slices by the lunchmeat)
3 tbsps. butter
1/2 cup sliced almonds
1/4 cup golden raisins
4 scallions (if you're into that sort of thing)
1/2 cup cilantro (that never happens)
Greek yogurt for a dollop on top

Regardless of the original destructions (yes, you read that right), I went fast and furious
trying to get this cooked quick (and burnt the toasted almonds, so that didn't happen).

Thus, I took a box of couscous, boiled it … boiled the carrots with the cinnamon, ginger, salt and pepper until they were tendercrisp.  If you're feeling brave, take the butter and toast the raisins with the almonds in a small skillet.  Microwave the precooked fajita seasoned chicken breast strips for 90 seconds.

Mix everything together, voila.  (For those of you who insist on saying "walla" or some variation thereof, be advised that voici ((pronounced vwah-see)) means here and voila ((pronounced vwah-la))means there.)  Two years of French in high school … I don't use it, but I do get snarky when the swanky bitches try to throw that "it has a certain je ne sais quoi" … Je means I, ne is negative, sais (pronounced say) is know, and quoi (pronounced kwah) means what.  **eyeroll** So, it has a certain "I don't know what" … Witch, please.

Anywho … enjoy the recipe.  It's good stuff.  Serve it in a bowl, and … voila.  I couldn't resist.
