Why so serious?
Sorry it’s been a few days, both of us have had that upper respiratory stupidity that has been going around. Delsym AC and AS+CM seem to help the most. But how in the hell am I supposed to talk to headhunters and slay meals in the kitchen if I’ve lost my voice and can’t get any sleep!?
Anywho, we went sightseeing in our state capitol today. Came home, then did this:
1/4 cup plus 2 tbsps chocolate graham cracker crumbs
8oz low-fat cream cheese (you’re supposed to go 4oz fat free and 4oz low-fat but I couldn’t find it).
1/2 cup sugar
1/2 cup fat free sour cream
1/2 cup egg substitute
2 tbsp unsweetened cocoa powder (we used dark chocolate)
1 tsp vanilla extract
Preheat oven to 325. Line a 12-cup muffin tin with foil or paper cup liners. Sprinkle 1 1/2 tsps crumbs into each.
In a large mixing bowl, combine the cream cheese, sugar, and sour cream in a bowl. Use an electric mixer til light and fluffy. (I whisked it ... too much effort)
Add egg substitute, cocoa powder, and vanilla. Mix well. Fill the bake cups.
Bake for 18-20m or until the centers are set. Cool on a baking rack for 15-20min. Put in the fridge for 30 mins at least.

Chicken with Spicy Black Pepper Sauce
1/2 tsp pepper
1/4 tsp garlic powder
1/8 tsp salt
4 boneless skinless chicken breast halves
1 tsp olive oil and 1 tbsp olive oil divided
1 tbsp soy sauce
1 tbsp steak sauce
1 tbsp Worcestershire sauce
2 tsps lime juice
1 can diced tomatoes
In a small bowl, mix the salt, pepper, and garlic powder. Sprinkle over the chicken on both sides and put on a plate. In a skillet, heat the 1 tsp oil over med heat and cook the chicken 2-4 mins on each side til fully cooked.
Mix the soy sauce, steak sauce, Worcestershire sauce, and lime juice with the tbsp of oil in a bowl. Pour over the chicken when it is cooked thoroughly. When it is cooked through, remove from the heat into a serving bowl and add the tomatoes.
7.5g fat (1.5g bad fat)
Carbs 3g
Protein 24g
We also cooked filet mignon in our NuWave we got for Christmas. Best thing ever!!
