Recipe #1 - Apricot Glaze Meatloaf (AHA Healthy-Fats, Low-Cholesterol Cookbook)
Meat Loaf with Apricot Glaze
Meat Loaf
1 pound extra-lean ground beef (we use 90/10%)1/2 cup uncooked quick-cooking oatmeal
1 small onion (we don't like onion, we use onion powder)
1 small apple, peeled and grated -- about 1/2 cup (galas are good)
2 large egg whites
2 tablespoons fresh parsley (optional, we don't use it)
2 tablespoons ketchup (the cookbook recommends no-salt)
2 medium garlic cloves, minced (we buy minced garlic in the jar, it's easier)
1/4 teaspoon salt
Glaze (we recommend double batching this)
1/2 cup all-fruit apricot spread3 tablespoons ketchup
2 tablespoons fresh orange juice
1 tablespoon honey
2 teaspoons cornstarch
1/2 teaspoon ground ginger
1/4 teaspoon red hot-pepper sauce
Preheat the oven to 350. Lightly spray a 9 x 5 x 3-inch loaf pan with cooking spray.
Crumble the beef into a large bowl. Add the remaining meat loaf ingredients. Combine the ingredients using your hands or a spoon. Put the beef mixture into a pan.
Bake for 45 minutes, take it out and pour off any fat (90/10 is going to be minimal). Pour the glaze mixture over the top of the meat loaf and put it back in the oven for 15 additional minutes. Serves 6.
(heats up really well the next day for lunch)
