Going Crustless

When situations change, whether it be a change of season, or change of employment, we must be willing to adapt.. It is not always easy to do so, or even notice that the situation has changed and we need to change our eating habits with it.
For instance, my husband's occupation has progressed, thus taking on a more desk oriented position and reducing his mobility. Although his fitbit says he still does 10-15,000 steps on a daily basis, some days he is more sedentary which does not allow for much cardio and calorie burning.
We're going to have to do what we can to reduce the carbs lower than the 130 ceiling I initially set for him. One way is to find recipes that allow for crustless eats. Pulled pork is always great with a side of slaw, or in my husband's case, spinach salad as a preference.
Online, I found multiple crustless spinach quiches that provide for high protein, low carb, high vitamin content.
5 eggs, beaten
3 cups Monterey Jack cheese, shredded
Frozen or fresh spinach, to taste
Shaved/thin sliced black forest ham, sliced/diced/chopped, to taste
Cajun spice
Pink Himalayan salt blend
Saute the spinach in a skillet with a tbsp. of olive oil … I use the salt blend in place of the recipe's recommended diced onion.
Beat the eggs in a bowl, add the cheese and ham and blend. Add the spinach when it is ready. Blend and add the spices to taste.
In a 9 inch round pie pan, glass preferably, pour the mixture in, and sprinkle more Cajun seasoning on top. Bake at 350 for 30 minutes. Let set for five minutes, and serve.
